Mackerel and avocado on toast
This is one the tastiest lunch options and incredibly easy to make. Mackerel is very rich in omega 3 and is considered one of the most nutritious fishes as it’s also an excellent source of B12 too. A great lunch to help reduce inflammation and protect heart health.
Creamy avocado on toast topped with the delicate taste of fresh mackerel. Spring onions and zesty lime. It’s heaven in every bite!
Ingredients
serves 1
1 mackerel fillet, ready to cook
2 pieces of preferred GF toast
1/2 avocado
1/2 lime, juice only
pinch sea salt for seasoning
1 spring onion, finely chopped
2 cherry tomatoes, sliced
pinch chilli flakes (optional)
pinch of nigella seeds (optional)
small handful of salad leaves (I used watercress)
Place the mackerel fillet on a baking tray, lined with parchment paper
Bake FAN 180 for 8-10 minutes
Prepare your toast
Mix together avocado, lime juice and sea salt and spread onto the toast
Top with the mackerel. (remove the skin if preferred)
Sprinkle with over the tomato and spring onion and top with chilli flakes and nigella seeds (if using them)
Add a handful of salad leaves to the dish and serve with a wedge of lime
