Loaded omelette

Nourish your body with a colourful omelette. Add a pop of colour to your plate. Not only are you adding goodness but it will add an anti inflammatory punch to your breakfast and keep you full until lunchtime.


Ingredients

serves 1

  • 1 tbsp olive oil

  • 1 spring onion, cut into chunks

  • 6 mushrooms, sliced evenly

  • 1 tomato cut into chunks

  • 2 eggs

  • pinch of sea salt

  • 1 tsp ground turmeric

  • 1 tbsp olive oil

  • 1 handful of spinach

  • 1 tbsp hemp seed

  • pinch chilli flakes


On a medium heat, start by softening the spring onion, mushrooms and tomato in a little olive in a non stick pan

mix together the eggs, sea salt and turmeric in a bowl and pour over the vegetables. Add in the spinach and leave to cook on a low to medium heat until the egg is just cooked.

remove from the heat, sprinkle with hemp seed and chilli flakes.
