Ingredients

  • 2 hard boiled eggs, halved

  • handful of pistachio nuts

  • 4-5 slices of watermelon

  • handful of watercress


Add them all to a plate. To help blood sugars, always start by eating the protein first, followed by fats and then eat the carbs, if the items are separate like this.

Tip - hard boil your eggs the night before and store them overnight in the fridge. Prep your watermelon and store in a sealed container.
