Watermelon, mint and cucumber salad
This is a salad that is fresh, delicious and tangy. The perfect salad for a summer BBQ. Watermelon, just like cucumber is 90% water and one of the best electrolyte rich foods to include in your diet. Adding the cauliflower crumb will help to eliminate toxins from your body
Ingredients
Side salad - serves 4
half watermelon, cut into triangles
half cucumber, cut into circles
handful of mint leaves, stems removed
1-2 cauliflower florets (blitzed into fine crumbs)
1 lime, zest and juice
handful of shelled hemp seed
Layer the watermelon, cucumber and mint. Sprinkle over the cauliflower crumb, hemp seed and lime zest.
Just before serving, squeeze over the lime juice.
