Butterbean salad
This is the perfect side salad to go with your BBQ grills. Its a simple salad that is fresh, delicious and so easy to prepare.
Butterbeans are a great source of folate, which means that they are a great energy booster and because they are rich in antioxidants, they protect you against inflammation.
Ingredients
Side dish - serves 4
1 red onion, finely sliced into half moon circles
sea salt and black pepper to season
1 tsp dried oregano
1 handful of tomatoes, roughly chopped
1 tbsp apple cider vinegar
1 tbsp lemon juice
400g ready to eat butter beans, rinsed and drained
drizzle of basil oil (optional) can substitute with extra virgin olive oil
2 handfuls of salad leaves (I used a mixture of rocket leaves and lettuce)
1 avocado
hemp seed and chilli flakes to sprinkle on the top
Mix together the first 8 ingredients (upto and including the basil oil). Leave to infuse at room temperature for at least 10-15 minutes. Taste and season with more sea salt, lemon juice or oil if needed.
To plate, arrange the salad leaves and add the bean mixture and juices on top of the leaves. Just before serving, slice up the avocado into chunks and scatter this throughout the salad.
To serve, sprinkle over some hemp seed and chilli flakes.
