Egg fried cauliflower rice

This grain free cauliflower rice is an excellent alternative to rice. This cruciferous vegetable is rich in antioxidants, which helps to reduce inflammation. This super tasty bowl food will become your new favourite Chinese fried rice healthy alternative

Cauliflower and cashew nuts are an excellent source of fibre, which helps to maintain a healthy digestion and promotes good bacteria in your gut.


Ingredients

Serves 2

  • 1 red onion, finely sliced

  • 2 garlic cloves, finely chopped

  • 1 thumbnail sized piece of ginger, peeled and grated

  • chilli, sliced into thin circles (optional and amount you use depends on your heat preference)

  • 1-2 tbsp olive oil

  • 1 courgette, remove the seeded part in the middle. cut courgette into small cubes

  • 1/2 cauliflower, blitz into rice with small pulses

  • 2 - 3 tbsp GF Tamari soy sauce

  • 50g frozen petit pois or peas

  • 1 egg

  • 20g cashew nuts, roasted in the oven FAN180 until golden brown (about 10 minutes)

  • 2 spring onion, finely chopped

  • 1 tsp nigella seeds


Soften the onion, garlic and ginger with 1 tbsp olive oil in a stainless steel frying pan on a medium heat. Add in the the courgette and continue to cook for 1 -2 minutes. Add in the cauliflower rice and cook for 1 - 2 minutes. Pour in the Tamari soy sauce and with a metal spoon, deglaze the base of the pan.

Make a well in the centre of the saucepan, add 1 tbsp olive oil and crack in the egg. When the white is fully cooked, use your metal spoon to mix everything together.

Add in the frozen petit pois and they will melt as you mix them in.

Mix in the oven roasted cashew nuts and serve topped with spring onion and nigella seeds
