Tamari soy and honey glazed chicken thighs

Roasted chickpeas are a cheap and easy snack to make. They are a great source of fibre to help support your digestive system. Served with a probiotic yoghurt to support gut health.

Tamari soy and honey glazed chicken thighs


Ingredients

serves 4

  • 8 chicken thighs, bone in and skin scored

  • 3 garlic cloves, grated

  • thumbnail sized ginger, peeled and grated

  • 3 tbsp GF Tamari soy sauce

  • 1 tbsp Apple Cider Vinegar (ACV)

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 2 spring onions, finely chopped - reserve a little to sprinkle over before serving


Mix all the marinade ingredients together and brush all over the chicken thighs

Place the chicken thighs on a tray over a baking tray

Leave to marinate overnight or for at least 30 minutes

Bake FAN 190 for about 40-45 minutes

Strain the juice at the bottom of the baking tray and serve as the gravy

I served mine with basmati rice and steamed vegetables
