Tamari soy and honey glazed chicken thighs
Roasted chickpeas are a cheap and easy snack to make. They are a great source of fibre to help support your digestive system. Served with a probiotic yoghurt to support gut health.
Ingredients
serves 4
8 chicken thighs, bone in and skin scored
3 garlic cloves, grated
thumbnail sized ginger, peeled and grated
3 tbsp GF Tamari soy sauce
1 tbsp Apple Cider Vinegar (ACV)
1 tbsp honey
1 tbsp olive oil
2 spring onions, finely chopped - reserve a little to sprinkle over before serving
Mix all the marinade ingredients together and brush all over the chicken thighs
Place the chicken thighs on a tray over a baking tray
Leave to marinate overnight or for at least 30 minutes
Bake FAN 190 for about 40-45 minutes
Strain the juice at the bottom of the baking tray and serve as the gravy
I served mine with basmati rice and steamed vegetables
