chia pudding with Kiwi and protein

Chia pudding is the perfect healthy breakfast meal prep for the week. It's creamy, satisfying and loaded with a perfect balance of protein, fat and carbs.

First thing in the morning on an empty stomach is the best time to eat kiwi fruit. It detoxifies the system of your body and the fibre in the fruit contains lots of minerals that will provide you with a day's energy. The coconut milk kefir is aids digestion and gut health.

Chia pudding with kiwi

Ingredients

serves 1

  • 2 tbsp chia seeds

  • 2 tbsp bovine or marine collagen peptides powder

  • 4 tbsp coconut milk kefir

  • 1 tsp maple syrup - If you need to sweeten the pudding

  • 1 tsp vanilla extract

  • 1 kiwi, sliced

  • hemp and flaxseed to sprinkle on the top


Mix together the chia seeds, collagen powder, vanilla extract, kefir (and maple syrup if using) in a bowl.

Stir and mix well.

Leave for 2-3 minutes and stir again, cover and store in the fridge. For best results, leave to sit for at least 1 hour, for the seeds to soak up the kefir.

(you can increase the quantity and store in an airtight container for 5 days if you are meal prepping).

When you are ready to eat, top the chia pudding with slices of kiwi fruit and sprinkle over some hemp and flaxseed.
