carrot cake overnight oats

For those of you with a sweet tooth or need a breakfast to grab and go, this is a perfect healthy breakfast that takes about 5 minutes to whip up the night before. Not only are they packed with whole grains and fibre, but they taste just like carrot cake thanks to the shredded carrot and cinnamon spice. These overnight oats are naturally sweetened with the banana and dates.

Ingredients

serves 1

Overnight oats

  • 45g gluten free oats

  • 2 tbsp collagen powder

  • 1 tbsp chia seeds

  • 1 banana, mashed

  • 2 dates, stone removed and finely chopped

  • 1 small carrot, no need to peel, grated

  • 1/2 tsp ground cinnamon

  • 145g dairy free yoghurt

To serve

top with dairy free yoghurt and sprinkle over with 4 crushed walnuts or pecans and a dusting of ground cinnamon


Combine all the ingredients into a medium container with a lid and mix thoroughly.

Cover and transfer to the fridge overnight (or for at least 2 hours)

In the morning, top with a spoonful of yoghurt, crushed nuts and the cinnamon dusting

TIP - Depending on how thick you like your oats, feel free to add a splash of water to loosen the mixture, before serving.
