MACERATED strawberries with yoghurt

Ingredients

serves 2

  • 300g fresh strawberries, quartered (reserve 2 strawberries to top the dessert)

  • 1 tbsp raw cane sugar

  • 240g coconut milk yoghurt

  • 2 tbsp bovine collagen powder

  • 1 tsp vanilla extract

  • 1-2 tsp maple syrup


Place the cut strawberries in a bowl with the can sugar. Leave to macerate at room temperate for 30 minutes.

Mix together the coconut milk yoghurt, collagen powder, vanilla extract and maple syrup and leave to set in the fridge while you wait for the strawberries to macerate.

All that is left to do is to assemble your dessert. This can be done in advance and stored in the fridge upto 4 hours ahead, or prepped before serving.

Add a layer of the strawberries followed by the yoghurt, repeat and top with a strawberry.
