Chocolate torte
The chocolate torte that any chocolate lover will love. A must for a dinner party! It s easy to make as there is no baking involved. It’s also free from gluten, dairy and refined sugar…so no need to feel guilty when you are enjoying a slice!

Ingredients
Serves 8
For the crust
140g ground almonds
1 tbsp chia seeds
20g cacao powder
50g melted odourless coconut oil
1 tsp vanilla extract
2 tbsp maple syrup
pinch of sea salt
For the filling
150g 70% dark chocolate
250g coconut milk
2 tsp vanilla extract
Line the base of a 9 inch cake tin (with a removable base). lightly grease the sides of the tin with a little odourless coconut oil.
Mix all the ingredients for the crust together in a bowl until it forms a crumbly dough. Add the mixture into the cake tin and press the mixture down firmly with your fingers.
Place in the freezer to set while you prepare the filling.
Melt the chocolate - I melt mine Bain Marie style, in a bowl over simmer water in a saucepan. Do not let the chocolate boil.
Add the melted chocolate, coconut milk and vanilla extract to a saucepan stir and bring to a boil. Then immediately remove the saucepan from the heat. The mixture should be smooth and creamy.
Pour the mixture onto the crust and leave to set in the fridge for at least 2 hours.
Before serving, sift a generous dusting of cacao powder over the torte.
Tip - crush over some frozen raspberries when serving.
