Banana cake with chocolate chunks
What do you do when you have 2 or 3 ripe bananas? You make this family favourite banana cake. When your gut is out of balance, send bananas to the rescue. Ripe bananas are easier for your body to digest.
We all deserve a little cake treat!
Ingredients
Serves 6-8 slices
140g odourless coconut oil
100g Organic raw cane sugar
1 tsp vanilla extract
2 eggs
140g GF self raising flour
1 tsp GF baking powder
2 ripe bananas, mashed
70g bar of dark chocolate, bashed into chunks with the end of a rolling pin or use cacao nibs
TIP - if you have 3 ripe bananas to use up, then slice one lengthwise and place on top of the cake mixture before baking the cake
Cream together the coconut oil, sugar and vanilla extract.
Add the eggs and beat them in.
Fold in the flour and baking powder.
Finally stir in the mashed banana and chocolate chunks or cacao nibs
Pour the mixture into a loaf tin lined with parchment paper.
Bake FAN 160 for 55-60 minutes
