A perfect way to transform overripe bananas into a healthy and tasty treat. This recipe doesn’t use sugar as it’s naturally sweetened by the goodness of dates and bananas. They are a perfect treat if you are trying to manage hormonal changes as the flaxseed can help balance them out and adds great fibre too.

Ingredients

Makes 14 cookies

  • 2 x overripe bananas, mashed

  • 8-10 dates (stone removed), cut into quarters

  • 1 tsp vanilla extract

  • 1 tbsp nut butter (I used a date and walnut one, but cashew or almond would work well too). Substitute with seed butter if you are nut free.

  • 180g GF oats

  • 2 tbsp ground flaxseed


Add all the ingredients into a bowl and mix thoroughly.

Roll into 14 equal balls and place on a baking tray lined with parchment paper.

Press each one down with the palm of your hand

Bake FAN 180 for 15-20 minutes
