Sweet potato fries with Kimchi mayo

Sweet potatoes are the best snack and are a brilliant food source to help support gut health. When you pair these fries with a gut loving kimchi mayo, you know you are onto a great snack! Kimchi contains natural probiotic bacteria that your gut loves.

Ingredients

serves 2-3 as a snack

Sweet potato fries

  • 2-3 sweet potatoes, ends removed and sliced into fries (don’t peel the potatoes)

  • 1-2 tbsp rosemary, finely chopped

  • 1-2 tsp paprika

  • 1-2 tsp sea salt

  • 1-2 tbsp olive oil

Kimchi mayo

  • 1-2 tbsp fresh refrigerated kimchi (Kimchi sold at room temperature or pasteurised will not contain live bacteria to support gut health)

  • 1 tbsp collagen peptides protein powder (optional)

  • 1 tbsp olive oil

  • 2 tbsp mayonnaise (I use a mayo made with 100% olive oil)


Add your prepared sweet potatoes to a baking tray along with the rosemary, paprika, sea salt and olive oil. Mix thoroughly. Bake FAN 185 for 20-25 mins.

While they are cooking, prepare the dip by blitzing together the kimchi, collagen peptides and olive oil, until smooth. Stir in the the mayonnaise.
