Asian inspired coleslaw

This colourful and tangy salad results in a fresh and healthy coleslaw. It’s quick to throw together and ready in less than 15 minutes. Cabbage is a good source of fibre and helps you digest foods more easily. The mix of ingredients makes this an exceptionally wonderful gut loving dish.

Ingredients

Serves 4 - 6 as a side salad

  • 1/2 white cabbage, finely chopped

  • 1/2 red cabbage finely chopped

  • 2 carrots, ribboned with a potato peeler

  • 2 tbsp fresh mint leaves, finely chopped

  • 2 handfulls of sunflower seeds

Dressing

  • 1/2 blood orange, juice and zest (can substitute for normal orange)

  • 1/2 lime, juice and zest

  • 1 garlic clove, grated or finely chopped

  • 1 tsp maple syrup

  • 1 tbsp fish sauce

  • 1 tbsp mirin or rice wine

  • pinch of chilli flakes


Mix the vegetables and mint leaves together in a large bowl.

Mix together the all the ingredients for the dressing and leave to infuse for at least 10 minutes. Add the dressing to the salad and mix. Scatter over the sunflower seeds.
