marinated olives
Olives are a brilliant appetiser or snack to nibble on. I don’t buy the expensive deli style olives as most of them are marinated in inflammatory seed oil. They take 5 minutes to prep and the taste will keep you coming back for more.
Olives are a fantastic food to increase the health of your microbiome. They are great for gut health and because they are packed with antioxidants, they also help to reduce inflammation
Ingredients
1 garlic clove, thinly sliced
2-3 rosemary sprigs
fresh red chilli (optional)
zest of orange and lemon of half of each fruit
1 tbsp olive oil
1 jar of green olives in brine juice
1 tbsp dried oregano
Add the sliced garlic, rosemary sprigs, chopped red chilli, lemon and orange zest along with 1 tbsp of olive oil into a small pan. Heat on a low to medium temperature to soften the garlic and infuse the flavours. Be careful not to brown the garlic). Remove from the heat. When cooled, remove the rosemary leaves from stem and add the leaves back to the oil.
Drain the olives from the brine juice and add them to your serving bowl. Add the dried oregano and mix well.
Add the oil and mixture to the olives and mix well. Leave to infuse for an hour at room temperature for a better flavour.
