baked sweet potato with tuna

If you are struggling with low energy, inflammation or poor digestion, try this recipe. Enjoy a delicious gut healthy lunch with this baked sweet potato and let the oven do 95% of the work. Topped with a tuna filling and serve it with a little side salad.

Sweet potatoes are packed with fibre and antioxidants that support gut health, steady energy and overall wellbeing.

Ingredients

serves 1

  • 1 sweet potato

  • 1 tin of tuna in olive oil or brine, drained

  • 1 tbsp natural probiotic (dairy free) yoghurt

  • 1 tbsp lemon juice

  • sea salt and black pepper to season

  • broccoli sprouts (optional)


Prick your potato all over with a fork and place onto a baking tray

Bake FAN 180 for 50-60 minutes or until soft inside when pierced with a fork

Mix together the tuna, yoghurt, lemon juice and season with sea salt and black pepper

Add the potato to your plate once cooked and slice open

Top the potato with the tuna and sprinkle over some broccoli sprouts

Serve with a side salad - I've served mine with watercress and tomato
