Cod poached in bone broth
This is comfort food that nurtures your body. Chicken bone broth helps to maintain your immune system, and improves joint pain and stiffness.
Ingredients
serves 2
1 fennel, finely sliced
1 onion, finely sliced
1 tbsp olive oil
2 bay leaves
sea salt and ground black pepper to season
2 portions of cod fillets
300ml chicken bone broth
Boiled potatoes, cubed - portion for 2 people
serve with steamed broccoli
On a medium heat, soften the fennel and onion with olive oil and bay leaves for 2-3 minutes. Season with sea salt and black pepper.
Add the cod fillets and top with the bone broth. Bring to a gentle simmer and cover with the saucepan lid and leave to cook for 10-12 minutes (depending on the size and thickness of your cod fillets, you may need to adjust the timing).
Add the cooked boiled potatoes to your serving bowl (it doesn't matter if they have cooled down as the broth will warm them).
Top with the cod and broccoli stems and pour over the broth mixture. (remove the bay leaves).
