Almond butter cookie

Almond butter is a brilliant source of fibre, that supports a healthy digestive system. Almonds contain healthy fats that have great anti-inflammatory properties. A simple and quick recipe for a protein rich deliciously chewy and moorish cookie. A perfect treat!


Ingredients

makes 8-10 cookies

  • 100g Nutcessity organic gingerbread almond nut butter

  • 100g gluten free oats

  • 1 tsp GF baking powder

  • pinch of sea salt

  • 1 tsp ground cinnamon

  • 1 tsp mixed spice

  • 1 tsp vanilla extract

  • 100g honey

  • 1 egg


Mix all the ingredients together in a bowl until fully blended.

Place in the fridge for 30 minutes to chill.

Line a baking tray with parchment paper

Remove the dough from the fridge and roll them into 8-10 balls. Arrange them onto the tray, making sure you space them out. Use a fork to flatten them out.

Oven FAN 180. Bake for 10 minutes. They should be firm and golden around the edges.

Allow to cool completely on a baking rack.
