Watermelon, mint and cucumber salad

This is a salad that is fresh, delicious and tangy. The perfect salad for a summer BBQ. Watermelon, just like cucumber is 90% water and one of the best electrolyte rich foods to include in your diet. Adding the cauliflower crumb will help to eliminate toxins from your body

Ingredients

Side salad - serves 4

  • half watermelon, cut into triangles

  • half cucumber, cut into circles

  • handful of mint leaves, stems removed

  • 1-2 cauliflower florets (blitzed into fine crumbs)

  • 1 lime, zest and juice

  • handful of shelled hemp seed


Layer the watermelon, cucumber and mint. Sprinkle over the cauliflower crumb, hemp seed and lime zest.

Just before serving, squeeze over the lime juice.
