Spicy cucumber salad
This is one of those salads that you will make on repeat. The dash of ACV in this salad can help you regulate your blood sugar levels.
Ingredients
serves 2 - 3 as a side salad
1-2 handfuls of shredded gem lettuce or equivalent
1/2 cucumber cut into half moons
1 avocado, cubed
1 tsp chilli flakes
1 tsp sea salt
1/2 lime, zest and juice
1 tbsp Apple Cider Vinegar (ACV)
1 tbsp olive oil
1 -2 tbsp pumpkin seeds
Add the lettuce, cucumber and avocado into your serving bowl
Add the chilli flakes and sea salt
Add the lime zest and juice, followed by the ACV and olive oil
Mix it together well and serve with the pumpkin seeds scattered over the top
