Feel good Speedy soup

Get an anti inflammatory boost with this easy and speedy soup. It takes about 10-15 minutes to make and the flavour is amazing!

Adding anti inflammatory ingredients like onion, garlic, turmeric, ginger and olive oil can help to have a counter effect on inflammation and help to promote healing.

Feel Good Speedy Soup


Ingredients

Serves 1-2

  • 1 red onion, sliced into thin half moon shapes

  • 2 garlic cloves, grated

  • 1 thumbnail ginger, grated

  • 1 tbsp olive oil

  • 1 tsp turmeric powder

  • 165g prawns

  • 500ml chicken bone broth

  • 2-3 big handfuls of spinach

  • 2 slices of lime

  • 1 tbsp chopped mint

  • sprinkle of chilli flakes

  • OPTIONAL - add cooked rice noodles or butter beans for a heartier soup


Sauté the onion, garlic and ginger in olive oil on a medium heat.

Add turmeric and uncooked prawns and cook until prawns are cooked and pink

Add the bone broth and heat

Add the spinach leaves and let them wilt

Serve the soup and top with the chopped mint, lime slices and chilli flakes.
