Sweet potato hash

Sweet potatoes great for breakfast as they are an excellent source of fibre and rich in antioxidants too. Adding the egg makes this a simple nutritious breakfast choice that’s great for the gut. This savoury sweet potato hash nails all the savoury flavours. A true breakfast of champions!

Sweet potato hash


Ingredients

serves 1-2 people

  • 1-2 sweet potatoes, no need to peel and cut into small cubes

  • 4 slices of pancetta, roughly torn

  • 2 eggs

  • 1 tbsp olive oil

  • 2 spring onions, finely chopped

  • sea salt and black pepper to season

  • 1 tsp nigella seeds

  • pinch of chilli flakes


In a non stick frying pan, add the pancetta and sweet potato cubes to a pan and cook on a low to medium heat for 5-10 minutes. Season with a little pinch of sea salt and black pepper. Once the potatoes are cooked, push the potatoes towards the edge of the pan. Add the olive oil in the centre of the pan and crack in your eggs.

Once they are cooked sprinkle over the spring onion, nigella seeds and chilli flakes.
